Food: Simple vegan tomato and onion pasta

Hi everyone, a bit of a different post today from what I usually post. I thought i'd just share this super easy vegan tomato pasta that I whipped up a while ago that I love to make when I'm feeling a little lazy.

What you will need

I don't really measure when I cook at all especially if it is something I make up. I think it's always best to go with your instinct and be able to cook what you think is best.

1. Some tomatoes. These can be cherry or plum if you want something sweet or normal salad tomatoes if you are feeling like you want something a bit more neutral. For the purposes of this, I used two salad tomatoes.
2. A whole onion. This can be either red or white.
3. Olive Oil.
4. Dairy- Free Flora.
5. Salt & pepper.
6. Optional: Vegan cheese.

Method


1. In a saucepan, boil the water for the pasta and add salt.

2. Whilst waiting for the water to boil, heat some olive oil in a frying pan on low heat.
3. Chop the tomatoes and the onions in a way that you like.
4. Add the pasta to the boiling water until it is cooked the way you like.
5. Fry the onions until they are golden, adding the tomatoes half way through cooking the onions.
6. Drain the pasta and cover in Dairy-free Flora.
7. Mix the pasta into the frying pan and stir for 2-3 minutes covering the pasta in the mixture of onions and tomatoes.
8. Add some salt and pepper to taste.
9. You may also add vegan cheese if you like.
10. Serve.
